Sardines

Caught at dawn at the interior of the Arousa estuary, in the months of July and August, the time at which they have the most fat.

Manual production, like all Ramón Peña products, but with special care due to their small size.

The utmost respect for the product, from the cleaning and gutting to the grilling which toasts them and locks in their flavour, to the hand-packaging of every single one of the sardines, placed one by one.

They have a very delicate and smooth taste in the mouth, with a more tender and flavoursome meat due to, among other things, the fishing technique used, during which the sardines are not banged or squashed.
