Farmed in the Galician estuaries, it is a highly-valued variety in the food preservation industry.
It is a bivalve mollusc that lives in salty waters, at around 5-30 centimetres from the surface in sandy beds. They feed on small living organisms through the filtering of water.
They are purchased in season and from the fish market, and undergo a purification process to eliminate the sand and preserve their authentic taste of the sea.
Packaged one by one in tins, perfectly clean once their gills are removed. Unseasoned with an exquisite canning liquid.
